		<description>I read this story and take away something else.  The private restaurants are more likely to be sued over faulty product, and so hold themselves to their own standard.  The threat of [frivolous?] lawsuits encourages the restaurants to &#039;fly right&#039;, or waste money and pass the costs along to the consumer.  I don&#039;t recall a school district being sued over food lately, but maybe I don&#039;t read the right press.</description>
